Chef Nigel's Smoked Chicken Salad, Tarragon Dressing

An easy and delicious dish to enjoy post Christmas! Smoked Chicken Salad and Tarragon Dressing


For the salad
200g Smoked chicken, diced
30g Cherry tomatoes, halved
2 Spring onions, sliced
30g Toasted hazelnuts, crushed
Mixed leaves

For the dressing
1 Egg yolk
1 Tbsp Dijon mustard
10ml Olive oil
Squeeze lemon juice
½ Small bunch tarragon, chopped


For the dressing:
Add the egg yolk and mustard into a mixing bowl. With a hand whisk, keep whisking the mixture while gradually adding the olive oil. When all of the olive oil has been added season to taste with the lemon juice and stir in the tarragon.

For the salad:
In a bowl combine the smoked chicken, cherry tomatoes, spring onions and toasted hazelnuts. Add the dressing, mix and season to taste. Mould the mix into rings and place on plates. Garnish the top with mixed leaves and some toasted hazelnuts. Enjoy!
